Strawberry Delight

So incredibly light and easy to make, this recipe is sure to be a regular on your menu.  Super easy on the budget, as well, this recipe makes plenty to share.  Until they find out, each dessert is only 70 calories, then, they will be gone in no time!   Here is an option, so you have plenty to share and plenty for at home:  make up two batches of the cupcakes, freeze half for thawing as needed later, then prepare the other half in disposable bowls or party cups for serving at your summer get together.
Each box cake mix will yield 3 dozen cupcakes.  The directions for this recipe will be a little different than most of the others.   First, gather your ingredients.

Ingredients

  • 1 boxed Angel Food Cake Mix
  • Sliced Strawberries *Frozen,  then thawed berries make a great natural sauce.
  • Light Whipped Topping

Preparation

  1. Prepare boxed cake mix according to instructions.
  2. Bake according to the cupcake option instructions.
  3. Let cool completely.
  4. Slice cupcake in half.
  5. Drop 2 tablespoons of sliced strawberries over cake halfs.
  6. Spread 2 tablespoons of light whipped topping over cake and berries.
  7. Enjoy!

Sing Along Chocolate Shake

 

“You scream, I scream, we all scream for ICE CREAM!”   Driving through just about anywhere during the summer, you pass several open ice cream stands.  Your inner seven year old begins to sing that verse louder, and louder, and louder, the closer  you get to each stand.  I know, I know!  I know this scenario all too well.  Sometimes your inner seven year old, as well as your grown up self just wants a chocolate shake!  See?  I do understand.  Now you can have one.  Ice cold, creamy, chocolatey and only 80 calories, go ahead, sing that verse outloud and dance along!
Super quick and easy, gather ingredients and a blender.  Each recipe makes one shake.

Ingredients

  • 1/2 cup skim milk
  • 1/2 cup chocolate pudding prepared with non fat milk
  • 6 ice cubes

Preparation

  1. Toss all ingredients into blender.
  2. Blend about 10-20 seconds.
  3. Pour into glass.
  4. Enjoy!

Pumpkin Raisin Cookies

 

This cookie is a spin off of the pumpkin cookie.  Adding some more fiber and sweetness with the raisins.  The raisins also give these cookies a fun chewy texture.  You are getting all that with not many added calories.  Prepared accordingly, this recipe will make two dozen cookies at just 65 calories each.   Sure to be a hit with kids and adults alike, these cookies are super easy to make.  Recipe doubles very easily, so go ahead, make extra and have a friend over for coffee and pumpkin raisin cookies.
Preheat oven to 300 degrees and gather ingredients

Ingredients

  • 1 medium banana
  • 1/4 cup agave nectar
  • 1/2 cup dark brown sugar
  • 2 large egg whites
  • 1 tsp vanilla
  • 1 cup wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup rolled oats
  • 1 cup canned pumpkin
  • 1/2 cup packed with raisins

 

Preparation

  1. Pour all ingredients into mixing bowl
  2. With electric mixer, blend one to two minutes
  3. Drop by the tablespoon fulls onto cookie sheet about 2 inches apart
  4. Bake at 300 degrees for 10-12 minutes
  5. Cool and Enjoy!

 

Oatmeal Cookies

 

The subtle sweetness and hearty texture of the oatmeal cookie has been reinvented with healthy and whole food ingredients.  Now you can carry on Grandma’s traditional Oatmeal Cookie with a great heart healthy alternative.  Replace the animal fats, such as shortening and oils, with a simple banana.  Agave nectar does not tend to cause spikes in blood sugar levels, as does, white refined sugar.  Egg whites produce the same rising and fluffy effects on the cookies, without the added calories in the yolks.  As well, you are gaining better nutrition by swapping white flour for wheat flour.  Now this old time favorite cookie, that warms your heart like a steamy bowl of oatmeal, can actually be good for you!
Following this recipe will yield two dozen cookies, with each cookie containing only 60 calories.

Monkey Muffins

For a larger muffin, measure and drop one and a half heaping tablespoon of batter in each muffin cup, and you will find 21 muffins at 97 calories each. These would make a perfect on-the-go light breakfast.

To yield smaller muffins, measure and drop one heaping tablespoon of batter into each muffin cup, and you will uncover 28 muffins at just 72 calories each.

For just the right bite size treasure, measure and drop half a heaping tablespoon of batter into the cups of a mini muffin tin, and discover 56 mini muffins at 36 calories each.

The recipe mixes up the same for all three adventures, however the baking times will be different.   Bake at 300 degrees for approximately 22 minutes for the larger muffins.  Bake at 300 degrees for approximately 16 minutes for the smaller muffins.  Bake at 300 degrees for just about 8-10 minutes for the mini muffins.
